Here are the recipes from our last dinner with the doc class!  

Apricot Chicken

1 lb chicken breasts/thighs

1 jar of sweet and spicy french dressing

1 jar of apricot preserves or fresh apricot for less sugar

Craisins and Almond slices (optional) 

Place in crock pot on low for 6 hours.  Done! 

Cauliflower Rice 

1 head cauliflower

2 Tbs coconut or olive oil sea salt, garlic, ginger, coconut aminos, curry, garlic or freshly ground black pepper(optional seasonings)

  1. Place the cauliflower into a food processor and pulse until it has a grainy rice-like consistency.  Season with sea salt and freshly ground black pepper.
  2. Saute the cauliflower in a pan with oil and any additional seasonings desired (sea salt, garlic, ginger, coconut aminos, curry, or just freshly ground black pepper).  We added currants, onions, coconut oil, Bragg's liquid aminos (tastes like soy sauce w/0 the gluten), garlic and tumeric.

Quick and Easy Apple Pie

Crust:

  • 1 1/2 cups sunflower seeds
  • 3/4 cup raisins
  • 1 Tbs carob powder

Filling:

  • 5-6 medium sized apples, peeled and cored
  • 3/4 cup raw honey
  • 1 Tbs cinnamon
  • juice of 1/2 lemon
  • 1/4 cup unsweetened shredded coconut
  • dash of ground cloves (optional)--we used allspice
  1. Make the crust by placing sunflower seeds, raisins and carob powder in a food processor and process with the until finely ground (mixture will stick together).
  2. Line a 9" pie pan with mixture and form crust.
  3. Wash and core the apples.
  4. Place in food processor, and pulse chop until cut into small pieces (be careful not to chop apples too finely and make apple sauce).
  5. In a large bowl, combine chopped apples, cinnamon, lemon juice, honey and dash of cloves (optional) together.
  6. Scoop the mixture into pie crust. Save the "juice" that remains in the bowl and drizzle over pie when served. Level out with a spatula.
  7. Sprinkle coconut flakes on top of mixture.
  8. Place in refrigerator for 1 hour to allow pie to set.
