 Give this some thought for just a moment...what did you do yesterday? Is there anything note worthy? Anything worth sharing? Anything that you can't wait to do again today or tomorrow or next week? Did you make anyone smile? Did you accomplish a long awaited task or maybe a dreaded chore with great success? Can you say that you laid your head on your pillow feeling that you had a great day, you took advantage of the day and it was full! Full of Life??? 

 You have choices everyday along with responsibilities. Choose to LIVE your LIFE fully. Take advantage of the day before too many days pass. Enjoy Life!

Francie's Italian Sausage Bake

This is a great meal that is easy to prepare and good for large groups or left overs!!

Links of Italian Sausage (depends on how much you want...)
I recommend Isnerio's Chicken Italian Sausage (no preservative, no msg, no additives)
cut each link into 3 equal parts (while still raw)

1 small sweet mayan onion (slivered)

3-5 bell peppers (use multiple colors) and cut into strips

put all the ingredients in a pyrex/glass pan, drizzle a little bit of olive oil and sprinkle some fresh cracked pepper. Put it in the oven at 325 and cook uncovered for about 2 hours or so....(depends on amount, I did three packages of links so - 45 pieces and it took a little over 2 hours for perfection :o)

Traditionally, this is eaten as a sandwhich with thick cut bread dipped in the juice of the bake and top with the sausage, peppers and onions.

Being gluten free, I ate (and served) it plain. It is filling either way!! This is also really good with eggs and potatoes the next morning!!

A small shift in perspective can re-shape a thought, a moment or a lifetime. Your life will have so much more joy if you live seeing the good, feeling the love and being grateful for what IS.

A great way to make this a habit or more so an instinctual reaction is to journal before you lay your head each night. Write down everything good that you encountered during the day. No matter how big or small, remember the good, the happiness, the positive... some days you may only have 3 or 4 things, some days you may be able to fill a page. This little practice will brighten your outlook. Good happens EVERY DAY....believe this!

Sweet Potato & Chicken Enchiladas:

This is a PVC team and patient favorite! 

2 - 3 medium sized yams
(I pre-bake them wrapped in foil at 350 for 1 hour...often the night before)
1 can of reduced sodium black beans
1 small can of chopped Green Chili's
shredded chicken (about 2 breasts worth)
1 can/jar of salsa verde
a few shakes of cumin and pepper to taste

Corn tortillas
Cilantro
Mexican Cheese blend (or use a non-dairy variety...)

mix mashed yams, chili's and cumin in a bowl. Cover the bottom of a 13 x 9 baking pan with a thin layer of salsa verde then lay about 6 corn tortilla's (we do this one lasagna style) spread your sweet potato mix throughout the pan. Then put a black bean layer followed by your chicken layer and cover with a second layer of corn tortillas... (again about 6 with some overlap) cover the top generously with some more salsa verde then add your cheese. Top with some cilantro and bake at 350 for about 20 - 25 minutes (until cheese melts).

Top with sour cream, salsa or anything else that you like :o) 

 For a "healthier" version...just mix your mashed yams, chicken, green chili's & cumin. I have often eaten just that...it is delicious hot or cold!!

 You can do this vegetarian too...with no chicken - still tasty!!

Do you have a DREAM...a vision of a better life for yourself, your community, our society as a whole? Dr. Martin Luther King Jr. did. His dream became his mission and with dedication and some sacrifice, his dream is now our reality.

I have an immense respect and a profound sense of grattitude for Dr. Martin Luther King, Jr. This is my tribute to him.
